Chocolate Peanut Butter Overnight Oats

How I do mornings has generally always been the same. I’m cursed with being a light sleeper and that usually means I’m up early. I like starting the morning off slowly and enjoying some time to myself before rushing into the workday by making breakfast, having a cup of tea, and reading/writing for a few minutes. But lately my mornings have been turned upside down and it’s thrown me off big time. Starting a new job and trying to balance work and a social life has left me burnt out and most days this makes waking up earlier than necessary feel out of the question. This has reminded me of how important it is to rest when your body needs it, and to say no if you need to. So this weekend that’s exactly what I’ll be doing :)

For people with little time to spare in the mornings, this oatmeal is perfect. It’s made the night before so in the morning you can just grab it and go. Its fudgy and filling and delicious, enjoy!!

Chocolate PB Overnight Oats

Makes 1 serving

1/3 cup oats

1/2 cup almond/oat/rice/soy etc. milk

1 tsp chia seeds

1/2 banana, mashed with a fork

1 tbsp peanut butter

1 tbsp cocoa powder

1 tsp maple syrup

Optional: seeds, nuts, yogurt, extra milk etc. to top

Mix all ingredients together in a jar, then place in fridge overnight or for at least 3 hours. Before eating stir in a splash more milk if necessary and top with any seeds, nuts, yogurt etc. you like.
