Sweet Somethings

 

When I asked my mom for help naming these she suggested "sweet somethings" because they're sweet and decadent, yet full of substance. I have to agree with her on that. These tasty treats are so chewy, sweet and nutty - I'm obsessed.

 

Sweet Somethings:

Makes 8

1/2 cup packed dates

1/2 cup slivered or sliced almonds

1/2 cup oats

2 tbsp hemp hearts

1/4 cup melted dark chocolate

Preheat oven to 350°F and toast almonds and oats until golden, about 5-7 minutes, keeping a close eye on them. While toasting the almonds and oats, soak the dates in boiled water to soften. 

Once oats and almonds are toasted and dates are soft, add everything but chocolate into a food processor and pulse until the mixture comes together into a sticky dough. Scoop out dough by the tablespoon and shape into balls with your hands.

Melt chocolate in a heat proof bowl over a small sauce pan of boiling water and drizzle over balls using a spoon, then finish the bites off with a sprinkle of hemp hearts.
